You’ll find many different types of cheese knives for different kinds of cheese, especially given that the hardness and structure can vary massively. This, of course, means that the type of cheese knife you use depends largely upon its hardness.

For soft cheeses, you'll want to use a spreading knife that doesn't have a sharp blade and is, therefore, easy to spread with. 

You may also want to consider one with a hole in the blade, minimising the cutting surface as much as possible to prevent the cheese sticking. These are often multi-purpose cheese knives that will glide through soft cheeses such as camembert as well as harder ones.
