A popular knife type, these popular Japanese style knives are handy to have in the kitchen as an all-purpose knife that can chop, slice and dice. They are often considered to be the Japanese version of a utility knife or chef’s knife.

Quite simply, the word santoku means 'three qualities' in Japanese. Some believe this refers to their uses for cutting meat, fish and vegetables, making them an immensely versatile knife type.

A santoku knife can be recognised by a high blade where the spine only tapers towards the tip at the end of the blade, also being a lot lighter than many European knife types and having a blade length of approximately 18cm.


Santoku knives with a fluted blade (sometimes called a granton edge or hollow edge) allow food to easily slip off the blade.
