.The I.O.Shen Mastergrade range of knives are all made using Triplex steel technology. This is the process of sandwiching a super hard layer of Rockwell 62° stainless steel between 2 layers of much softer Rockwell 10° stainless steel. This allows the use of a very hard steel that will take and hold an exceptionally sharp edge without the usual issue of brittleness being a limiting factor. The edges are sharpened by hand to a 15° angle.
Whilst it is a beautiful and striking feature the Tai Tang handle in not simply an embellishment, it is an integral part of the handle. Injection moulding of the highly durable ebonite means that the handle will not fall apart, as can sometimes be the case with traditional riveted handles.
