THE I.O SHEN STORY
The I.O.Shen Mastergrade range of knives are all made using Triplex steel technology. This is the process of sandwiching a super hard layer of Rockwell 62° stainless steel between 2 layers of much softer Rockwell 10° stainless steel. This allows the use of a very hard steel that will take and hold an exceptionally sharp edge without the usual issue of brittleness being a limiting factor. The edges are sharpened by hand to a 15° angle.
