How to Spatchcock a Chicken

- Always use a good strong set of kitchen poultry shears
- Turn the chicken upside down
- Exposing the parsons nose
- Cut from the parsons node down one side of the breast bone
- Repeat on the other side cutting through the ribs
- Turn the chicken back over
- Press down on the breast bone creating a flat finish
- The breast bone can be reserved for stock or bone broth
