Based on the design of a knife we made for Pip Lacey (of Hicce fame). She was after a knife that she could use to both carve and prepare fish, but was struggling to find one that had a handle that was comfortable enough to use for hours in the kitchen. And so we made her this knife and were – in our usual modest way – quite pleased with how it turned out, sufficient to want to offer it to other folks out there with the same conundrum. With just the right amount of flex, and kept razor sharp, this knife is perfect for all those tasks where a conventional, straighter carving knife isn’t the answer; preparing a large gammon, filleting a splendid salmon or breaking down a large rack of beef ribs.

Description

100% British - designed, sourced and made entirely here in the UK. Our blades are initially formed in Sheffield from Silver Fox 100 - a 95% recycled British Steel. Every blade is individually thinned, finished and sharpened by hand in our workshop near Marlborough.

Our handle material was developed in house, developed over the course of a year using British materials and expertise.

Marble Handles

Each batch of marble is hand-poured in to individual blank moulds using process that has taken a long time to perfect - allowing the different colours and shades remain clear and distinct.

Traditional Handles

For a long time, knife makers would put a thin strip of leather between the wood and the steel of their blades, to allow the handle to remain fixed even as the wood expanded and contracted during the seasons. Our traditional handle design references this heritage.

Our knives are balanced and weighted for precision, with blended curves and graceful blade arcs. We have spent years perfecting our striking handle shape. The result is that our handles look and feel fabulous in the hand and beg to be picked up and used again and again. Our handle making process offers a huge range of colours across 4 distinctive patterns to please all tastes and match all kitchen styles. Every handle is unique, created entirely by hand and eye.

Our steel is hardened to the optimal 60 HRC, allowing for an edge that starts sharp and stays sharp, with minimal maintenance. Hand-thinning the blades allows fo an incredibly fine cutting edge, so requiring very little effort to effect clean and satisfying cuts. Our handle material is a proprietary blend of polymers and fillers, hardened to Shore Hardness of 90 (the same as a golf ball), creating a durable yet comfortable handle that enables hours of cutting without discomfort or fatigue.
