Gorse Knives was started in 2016 by Alexander O'Neill. After studying Jewellery and Silversmithing at The John Cass School for Architecture and Design, Alexander began making his own chef's knives, blending traditional craft skills and clean modern aesthetics. Initially using his knives in his own kitchen, he started getting requests on social media for commissioned pieces and founded the company Gorse Knives.
